Cast Iron Pizza

250g White bread flour
165ml Lukewarm water
6g Sugar (1 tsp)
4g Instant dried yeast (1 tsp)
4g Salt (1/2 tsp)
Directions
- Add the sugar to the warm water and stir until sugar dissolves, then add yeast. Stir and set aside until the yeast activates.
- Add salt and flour together.
- Once activated, add yeast mix to a bowl. Then add the flour mixture on top. Mix ingredients into a shaggy dough.
- Put dough in an oiled bowl and cover. Allow to rise 1 hour.
- With lightly oiled hands, knock the dough back, form it into a ball again, put it back in the bowl, and allow it to rise another 45 minutes.
- Oil a cast iron pan, and press the dough into the appropriate disk shape.
- For a Frico crust, tuck about 3 oz. of cheddar cheese between the edge of the dough and the inside edges of the pan (not the bottom!).
- Top your pizza as you wish. Bake at 375 degrees F for approximately 25 minutes.
- Remove the pizza from the pan, and put back into the oven on a pizza stone for another 2 minutes to crisp up the bottom.
